Light but Lively ChiliĀ 

Ingredients: 1lb ground turkey 1lb sirloin tips (cubed) Can of kidney beans (drained) Can of bush’s baked beans Can of diced tomatoes Jar of salsa Can of mexi corn 1 onion (chopped) 1 jalapeƱoĀ (chopped) 1 tbsp olive oil Spices – 3tbsp chili powder and 2tbsp cumin. 1tbsp garlic powder, paprika & oregano. Ā 1 1/2 tsp sea salt & pepper. Pinch of red pepper flakes. Directions: Heat pot with olive oil on high and brown sirloin tips for 5 min then set aside. Brown ground turkey on Med/high and add all of the spices. Add all remaining ingredients, cover and turn down to low for 3 hours. Check and stir occasionally. Serve with a dollop of sour cream cheese or Greek yogurt if your watching calories and a sprinkle of shredded cheese. People who like a little more kick add more red pepper flakes and Tabasco. Turkey Tuesday Meatloaf

This fabulous turkey meatloaf goes great with some steamed broccoli. For a carb I usually have mashed potato or sweet potato or even rutabaga as pictured. Ingredients: 1 lb Ground Turkey or Chicken 1 egg 1 cup whole wheat seasoned bread crumbs 1 Tbs ketchup 1 Tbs A1 steak sauce Pinch of salt and pepper 1 tsp garlic and onion powder 1 tsp parsley 1/4 onion chopped 1/4 pepper chopped Directions In a large bowl add all ingredients and mix well Spray meatloaf pan with olive oil Place mixture in pan and drizzle with some extra ketchup Bake in oven at 350 degrees for 45 min ENJOY!        ...
